Really Good Chocolate Chip Cookies
This is the recipe I have been making lately when we are all in need of some homemade cookies.
Ingredients
1 cup butter (softened)
1 cup packed brown sugar
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon salt
2 eggs
2 teaspoons vanilla
2 1/2 cups all-purpose flour
1 12-ounce package (2 cups) semisweet chocolate chips
1 cup butterscotch chips
1 cup chopped walnuts (optional)
In a large mixing bowl beat the butter with an electric mixer on medium to high speed for 30 seconds. Add the brown sugar, granulated sugar, baking soda and salt. Beat mixture until combined, scraping sides of bowl occasionally. Beat in the eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. Stir in chips and, if desired, nuts. Drop using a 1/3 cup measure (these are large cookies); about 6 cookies to a cookie sheet.
Bake in a 345 oven for 15-18 minutes. Transfer cookies to a wire rack to cool.
