Banana Bread with Chocolate Chips
Chocolate Chip Banana Bread
This is the best banana bread I have ever had. It is the recipe that my Mom used when I was growing up and it is the one that I use now. Do not omit the chocolate chips. :)
Ingredients
1 cup butter, melted
2 cups sugar
4 eggs, lightly beaten
6 ripe bananas*
2 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
2 cups whole wheat flour
2/3 cup hot water
1 cup semi-sweet chocolate chips
*The bananas need to be very ripe. The method I use is as follows: when I have some bananas that are turning brown instead of throwing them away I put them in the freezer. When I am ready to make banana bread I pull the bananas out of the freezer and thaw them by putting them in a bowl of HOT water. When they are thawed I simply tear open on end and squeeze the fruit out of the peal into the mixing bowl. I have tried making the recipe with "ripe" bananas that have never been frozen and the recipe just didn't taste the same.
In a large bowl, stir together melted butter and sugar. Mix in the eggs and banana, blending until smooth.
In another bowl, stir together all-purpose flour, salt, baking soda, and whole wheat flour until thoroughly blended. Add to banana mixture alternately with hot water. Stir in the chocolate chips. Pour batter into a greased 9x13 pan.
Bake in a 325 oven for 1 hour and 15 minutes. Be sure bread is cooked through the middle by inserting a wooden toothpick in center, if it comes out clean it is done.
Let cool and enjoy!

Yummers! I will have to try this recipe! My sister makes a very similar recipe but she uses butterscotch chips... sounds weird but is also excellent! Hope you had a fun weekend.
Our favorite (at the moment) chocolate chip cookies also use butterscotch chips. I will add that recipe soon . . .
